I am trying again to shed a few extra pounds since last month and I am tired of eating those oil-free and junk-free healthy diets. I wanted something or anything which should be delicious and not break my diet plan. So, I came up with the idea to experiment with vegetables. This is a little bit challenging as I had to maintain low carbohydrate and low fat funda.
Vegetables are essential for a healthy body, skin, and hair. They are important sources of many nutrients, including dietary fiber, potassium, folic acid, vitamin A, and vitamin C. Most vegetables are naturally low in fat and calories which helps in weight loss. Therefore, one must include these in a daily diet in order to maintain good health.
But many of us don’t like the taste of some vegetables as they are not very good in taste. But we can make them delicious by cooking them in better ways. We can make vegetable soups or add them to your favorite food like Maggi, noodles, or rice.
Don’t worry!! I have a better solution to this problem. Here I am listing delicious ways to eat vegetables. I personally made these vegetable recipes in my kitchen. You can make these best vegetable recipes and eat more and more vegetables daily.
Delicious Ways to Eat Vegetables
Below are some delicious ways to eat vegetables. You can experiment with them with your choice of veggies. These recipes are healthy and tasty too.
1. Vegetable Daliya (Broken Wheat):
Daliya (Broken Wheat) is broken wheat that is popular in North India. It is high in protein but low in fat and calories. Therefore, you can include it in your diet plan for weight loss. It also helps in digestion and balanced blood sugar level. Daliya has so many benefits, that’s why I have included this in the best vegetable recipes.
- 1/2 cup Dalia
- Vegetables (cut into small squares): broccoli, carrot, beans, mushrooms, cauliflower, peas, corn
- Ghee (for cooking)
- 1 cup Water
- Salt and black pepper
How to Cook vegetable daliya (Broken Wheat):
Take a pan and put it on a gas flame. Add 1 or 2 tablespoons ghee and heat it. Add dalia and roast it till it turns golden brown. After that add all vegetables to it and mix it. Put salt and black pepper according to your taste. Add water to it, close the lid and cook until it gets dry. Garnish this vegetable dalia with parsley.
You can also make it in pressure cooker just like vegetable tehari.
The vegetable dalia is low in calories and high in nutrition. You can eat it anytime you want, especially at your dinner.
2. Vegetable Semolina Idli:
Idli is one of the famous food of south India. Steamed idli has low calory content. It is made from rice, washed black lentils, and a pinch of salt. You can also make idli with Semolina (suji or Rava). This vegetable Semolina idli is very nutritious and low in calories. You will definitely love its taste.
- 1 cup Semolina (Rava)
- 1 cup curd
- Vegetables (finely chopped): onion, carrot, tomato, capsicum
- Salt and Black Pepper
How to cook Vegetable Rava Idli:
Soak Rava in curd and keep it aside for 1 hour. Add chopped vegetables, chopped green chilies, black pepper, and salt to it. Now, take an idli pan and grease it with ghee. Put this batter in greased idli pan and cook it. Garnish idli with sesame seeds. You can make coconut chutney or green chutney with it.
3. Veggie pasta salad:
Veggie pasta salad is a delicious way to eat vegetables or you can say a healthy way to eat pasta. You can add any vegetable to it that can cook quickly.
- Half cup pasta (wheat pasta)
- Vegetables (sliced): peas, mushrooms, corns, broccoli, carrot, beans, cauliflower, capsicum, green chili
- Garlic and ginger paste
- 2 tablespoon mayonnaise (optional)
- Salt and Black pepper
- Oregano and red chili
How to cook Vegetable Pasta Salad:
Boil Pasta and vegetables separately. Don’t overcook vegetables, just lightly boil them. Keep them aside. Now take a pan, and add 1 or 2 tablespoons of olive oil. Add garlic ginger paste. After that, add vegetables and boiled pasta. Add salt and black pepper as per taste. Stir it. Now, at last, add mayonnaise and mix it. Adding mayonnaise is optional. This is my style of making veggie pasta.
4. Vegetable egg roll:
This vegetable egg roll is full of protein as it contains egg and gram flour. It is yummy to eat and easy to make. I consider it best for breakfast. It is easy to make and healthy.
- 2 eggs
- water(if needed)
- 3-4 spoon gram flour
- finely chopped vegetables: onion, carrots, garlic, ginger, green chili, capsicum.
- salt, turmeric powder, black pepper
- Olive oil to cook
How to cook Vegetable Egg Roll:
Take a bowl and add milk and gram flour. Mix them well. Now add eggs to it and mix it well. Add all other ingredients to it. The process of cooking is a little bit different so I have posted the whole process in the pic. Look at the below-given album:

5. Vegetable Brown Rice:
Brown rice is rich in fiber, proteins, magnesium, thiamine, calcium, and potassium. If you are trying to lose weight, include brown rice in your diet instead of white. Those who are suffering from diabetes should eat brown rice as it has a low glycemic rating which helps reduce insulin spikes.
- Brown Rice: 1 Cup
- Vegetables (sliced): peas, mushrooms, corns, broccoli, carrot, beans, cauliflower, capsicum, green chili, onion
- Salt and Black pepper
- More than half a cup of Water
- 1 tablespoon Ghee
- Jeera (Cumin Seeds) and rai (black mustard seeds) for tadka
How to cook Vegetable Brown Rice:
Soak the brown rice in water for 10-15 minutes. Take a pressure cooker and add ghee. When the ghee heats up add cumin seed and mustard seeds. Then add sliced onion and cook them till it gets translucent. Add all other vegetables and brown rice to it. Mix it and then add water to it. Add salt and black pepper and close the lid. Cook in low flame till 2-3 whistle.
Brown rice needs less water and it takes time to cook. Remember you need to cook brown rice longer than white rice.
6. Protein Salad:
Everything from Chickpea to lettuce in this salad have protein in them. You can add other veggies like capsicum, steamed broccoli and more in this salad if you want.
- Boiled Chickpea (white or black)
- Paneer or Tofu
- Green Chilli
- Black Salt
- Roasted Cumin Powder
- Black Pepper Powder
- White Salt
- Chat Masala
- Olive Oil
- Lemon juice
How to cook protein salad:
Mix Boiled Black Gram, Paneer or Tofu, Lettuce, Carrot, Cucumber, Onion, Tomato, and Green Chilli in a bowl. Add white salt, Black Salt, Roasted Cumin Powder, Black Pepper Powder, and Chat Masala as per your taste. Add 1 tablespoon of Olive Oil and lemon juice. Mix all the ingredients well.
